For most of winemaking history, wine did not begin its life in stainless steel or oak. It began in earth.

Long before temperature-controlled tanks, pneumatic presses and rows of French barriques, people shaped clay into vessels large enough to ferment, mature, store and transport wine. Archaeological evidence places the relationship between wine and pottery more than 7,000 years ago, while clay vessels were later adopted and adapted by the Phoenicians, Greeks and Romans across the Mediterranean. Amphorae became essential trade containers; larger forms such as the Greek pithos, Roman dolium and Spanish tinaja became part of the winery itself.

The names change with geography. In Georgia they are qvevri. In Portugal, talhas. In parts of Italy, orci. In Spain, the large, usually handleless vessels traditionally used for wine are tinajas.

They belong to different cultures and are not technically identical. Yet they share one fundamental idea: wine held in fired earth.

The clay history of Spanish wine

Spain’s relationship with clay is not a modern revival imported from elsewhere. Tinajas were deeply embedded in traditional Spanish winemaking, particularly across Castilla–La Mancha and other warm inland regions. Wine was fermented and stored in earthenware vessels for centuries, before industrial tanks and widespread barrel programs displaced them during the modernisation of the twentieth century.

Historic centres of tinaja production included Villarrobledo, Colmenar de Oreja, Lucena, Torrejoncillo and several pottery towns across Murcia, Extremadura and Andalucía. Some Spanish wine vessels eventually reached extraordinary capacities. By the late nineteenth century, the largest could hold several thousand litres and required specialist kilns—and a small army of people—to move them.

As stainless steel promised hygiene, consistency and temperature control, and oak became increasingly associated with premium wine, many old tinajas were abandoned, broken or relegated to gardens. Entire lines of specialist knowledge nearly disappeared with them.

Today, only a limited number of craftspeople retain the ability to make large wine vessels by hand. Juan Padilla has become one of the better-known modern Spanish tinaja makers, particularly among winemakers seeking traditionally formed vessels. The Moreno León family also revived tinaja production in Torrejoncillo in the late twentieth century, maintaining a connection with one of Spain’s historical pottery regions.

Calling these vessels “handmade” understates the process. A large tinaja cannot simply be thrown on a conventional potter’s wheel in an afternoon. It must be built progressively, usually in stages or coils, allowing each section to firm before further weight is added. Drying must be slow and even. Too fast, and the clay cracks. Too wet, and the structure may slump under its own mass.

Once dry enough to fire, the vessel faces its most dangerous point. A crack, trapped moisture or uneven firing can destroy weeks or months of work. Traditional large-vessel production was often seasonal: pieces were formed and dried over extended periods, then fired when conditions were suitable. The firing itself might last around a day, followed by several days of cooling before the vessel could safely be moved.

There is no single universal production time because capacity, wall thickness, clay body, climate and workshop method all matter. But a substantial hand-built wine tinaja is measured in weeks and months, not days.

That time is part of the vessel.

Amphora, oak and tank

Stainless steel is an extraordinary winemaking material. It is neutral, impermeable, easy to clean and precise. Temperature can be closely controlled. Oxygen exposure can be minimised. What goes into a tank can be protected with remarkable efficiency.

Oak behaves very differently. It breathes. It gradually admits oxygen, while also contributing flavour and structure through compounds from the wood. Depending on forest, grain, seasoning, cooper, toast and age, a barrel can bring spice, smoke, vanilla, cedar, toast, sweetness, tannin and palate weight.

Clay sits somewhere between the two—but is not a compromise between them.

Like stainless steel, amphora does not contribute an obvious layer of oak flavour. Like barrel, its porosity can permit gradual oxygen exchange. The exact degree depends on the clay, firing temperature, wall thickness, internal treatment and vessel condition, but well-made porous vessels can provide gentle micro-oxygenation without making the wine taste of wood.

That matters because oxygen is not simply the enemy of wine. Managed in small amounts, it can assist the development of texture, integrate phenolics and help a wine evolve. The question is not whether oxygen exists, but how much enters, when, and what the wine is capable of doing with it.

A tank preserves. A barrel both shapes and seasons. Amphora exposes.

You cannot hide in amphora. Oak can mask, soften or redirect attention. For amphora, the fruit must be pristine.

That is not an attack on oak. I use barrels and respect what they can do. But oak offers the winemaker another voice in the conversation. Amphora is much less forgiving. There is no toast profile to cover bitterness, no vanillin sweetness to broaden an angular mid-palate, and no obvious wood character to distract from compromised fruit.

If the grapes are dull, the wine may remain dull. If the fruit is diseased, oxidised or poorly handled, clay will not rescue it. If extraction is clumsy, amphora will faithfully carry that mistake forward.

But when the fruit is clean, balanced and alive, clay can hold its character with startling clarity.

The shape is not incidental

The geometry of the vessel is part of its function.

A cylindrical stainless-steel tank has vertical walls and a comparatively flat base. A barrel lies horizontally, with a broad central body and tapered ends. Amphorae and tinajas are curved, often with a narrow base and shoulder surrounding a wider belly.

During active fermentation, heat and carbon dioxide already generate movement within wine. In a rounded vessel, these convection currents can circulate differently from those in a straight-sided tank. The widening and narrowing girth guides the wine through the vessel, while settled material can be drawn through the moving liquid.

In practical terms, this can help maintain interaction between wine and fine lees.

In tank, lees settle firmly at the bottom unless the wine is mixed or pumped over. In barrel, they normally require bâtonnage—physical stirring—to return them to suspension. In amphora, the combination of vessel shape, fermentation energy, temperature movement and the natural currents within the wine can encourage a more continuous exchange.

I would not claim that every amphora permanently stirs its own lees. Once fermentation is finished and the wine becomes completely still, gravity remains gravity. But in our cellar, the rounded girth creates a perceptible internal pull and movement. The vessel seems to draw the wine around itself, carrying fine lees back into contact without the same degree of mechanical intervention required by tank or barrel.

That contact can build texture without obvious oak weight. It can soften the line between acidity and phenolic structure. It can give a wine breadth while allowing its fruit, saline character and aromatics to remain recognisable.

This is what makes amphora interesting to me. Not novelty. Not antiquity for its own sake. It offers another way of creating texture.

Our path to Spanish clay

Our use of amphora at Weathercraft is inseparable from Beechworth, but it also reaches back towards Spain.

My Spanish heritage shaped my relationship with Albariño and with the Mediterranean traditions surrounding food, wine and clay. Amphora Blanco brings those threads together: estate-grown Albariño and Chardonnay, whole-bunch pressed directly to clay for wild fermentation, followed by extended maturation in the same vessel. Our 2024 Amphora Blanco spent a minimum of ten months in amphora before bottling.

The choice of varieties is deliberate.

Albariño brings natural acidity, saline drive and aromatic lift. Chardonnay brings shape, familiarity and mid-palate depth. Clay does not make those characteristics disappear into a generic “amphora style”. Its value lies in allowing the two varieties to meet without imposing a third flavour over them.

The resulting wine is not intended to taste ancient, rustic or oxidative. It is meant to be precise, textural and contemporary.

Our connection to the vessels also came through Beechworth.

Rick Kinzbrunner of Giaconda has long been part of the region’s winemaking landscape, and his willingness to work beyond conventional Australian cellar practice helped make clay feel less like an historical curiosity and more like a serious working tool. Rick uses amphora in his own winemaking and has helped us navigate the practical process of bringing Spanish vessels into Australia.

That assistance matters. Importing a fragile, hand-built clay vessel from Spain is not the same as ordering a stainless-steel tank. Each one carries irregularities created by hand and fire. Each must survive handling, freight, quarantine, installation and its first fill. There is trust involved—not only in the maker, but in the people who understand how to transport and commission the vessel.

An old vessel with a modern purpose

The revival of amphora is sometimes presented as proof that winemaking is moving backwards.

I see the opposite.

Modern winemaking gives us extraordinary analytical control. We can monitor temperature, chemistry, dissolved oxygen and microbial populations in ways ancient makers could never have imagined. Choosing clay today is not a rejection of that knowledge. It is the decision to combine it with a vessel whose behaviour cannot be reduced to neutrality or flavour addition.

Amphora asks different questions.

Is the fruit good enough to stand without disguise?

Can texture come from lees, oxygen and shape rather than wood?

How little do we need to do?

What happens when the vessel supports the wine without trying to become the wine?

These are not nostalgic questions. They are questions about precision, restraint and transparency.

Clay may be one of winemaking’s oldest materials, but it remains one of its most revealing.

And, as I have learned, when you make wine in amphora, there is nowhere to hide.
