In exceptional years, select shiraz from our vineyard is vinified and matured over two winters, followed by twelve months of bottle age. The One Acre Project reflects our commitment to pure, ethically made wines. Notes of blueberry, dried kelp, clove, black olive, and beef stock unfold on a mid to full-weighted palate, with precise, structured tannins delivering balance and confidence.

A near-perfect vintage, producing wines with excellent balance, vibrant natural acidity and clear fruit definition. The stable season supported intensity without excess, giving the wines freshness, structure and beautifully formed tannins.
A bold, expressive Syrah that can stand up to the depth and intensity of slow-roasted meats, braised dishes, and richly spiced food. Think osso buco, slow-cooked lamb shanks, or dishes with warming spices that draw out the wine’s natural fruit and savoury character. For cheese, choose aged, hard styles such as Pecorino or Parmigiano-Reggiano.

Serve at room temperature, ideally 15–18°C.

This wine will benefit from being decanted for around 30 minutes before serving.
Drinking well now, with the structure and depth to reward careful cellaring for 10+ years. Over time, expect the wine to develop greater savoury complexity, softer tannins, and more layered spice, earth and dark fruit character.
