Our Wines
Our cellar changes with each release, and some wines are available seasonally. If a wine is not currently listed below, it may be between releases or awaiting its next allocation. Join our mailing list, or become a Wine Club member, for priority access to new vintages and limited bottlings.
In exceptional years, select shiraz from our vineyard is vinified and matured over two winters, followed by twelve months of bottle age. The One Acre Project reflects our commitment to pure, ethically made wines. Notes of blueberry, dried kelp, clove, black olive, and beef stock unfold on a mid to full-weighted palate, with precise, structured tannins delivering balance and confidence.
A complex, beautifully structured Tempranillo vinified from a select parcel of our vineyard and matured over two winters with generous bottle age. Notes of mulberry, cassis, raspberry and black cherry mingle with spice, vanilla, dried fruits, tobacco leaf and leather. The palate offers mouth‑watering acidity and rich, concentrated flavours that linger long after each sip.
This red blend of Grenache, Shiraz and Monastrell was fermented in amphora. Vibrant dark satsuma plums, ripe mulberries and a mineral aroma lead the nose. The palate is fresh and velvety, showcasing pure fruit with an earthy undertone and no oak influence.
This Albariño is barrel‑fermented to enhance texture and complexity. Aromatics of lemongrass, honeysuckle and white flowers leap from the glass. A savouriness and preserved lemon character adds a briny finish.
Vinified in clay to enhance complexity, this medium-bodied white blend of Albariño and Chardonnay presents notes of fresh ginger, lime zest, mezcal and saline. Crafted in amphora, it draws on winemaker Raquel Jones’ Spanish heritage and showcases a savoury, textured palate.
A structured chardonnay-complex, refined and quietly powerful. Apple blossom, grapefruit, white peach and preserved lemon lead the nose and palate, delivering immediate presence and focused intensity. With air, further layers of stone fruit, marzipan, and white pepper emerge. Finely laced acidity leads through to a long, composed finish.
Barrel fermentation, partial malolactic fermentation, and oak aging enhance this pinot gris' texture and complexity. Aromas of Nashi pear and spice lead into a layered palate of orchard fruit, nutmeg, yeast complexity, and a hint of citrus. Oak softens acidity, delivering a rounded texture, elegant length, and balanced finish.
As we await our vineyard-grown pinot noir in 2026, this Yarra Valley MV6 clone offers a glimpse into how site and soil shape its character. Bright raspberry, herbs, and a touch of earthiness shine, supported by velvety, fine-grained tannins. This wine reveals the clone’s potential and sets the stage for our Beechworth expression.
Savoury, textured and beautifully balanced, this 100% whole-bunch Garnacha is gently pressed to a 65% yield and naturally fermented in 1,000L clay amphora. Post-ferment, it returns to amphora for several months’ maturation, with occasional stirring. Amphora ageing preserves Grenache’s pure fruit, while natural malolactic fermentation brings harmony and length.
